Roasted Broccoli Gratin

Broccoli pretending to be fancy and absolutely getting away with it.

This dish is creamy underneath, crunchy on top, and full of Grater Rain goodness. White Rain boosts the béchamel. Black Rain gives just enough bite to make you forget you’re eating a vegetable.

Serve it as a side or the main event. Either way, there won’t be leftovers.

Ingredients

  • 1 large head broccoli, chopped

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 tbsp flour

  • 1 cup milk

  • 3/4 cup Grater Rain parmesan

  • 1/3 cup breadcrumbs

  • Black Rain, to taste

  • White Rain, to taste

Directions

  1. Roast broccoli at 400°F for 15–20 mins with olive oil, White Rain, and Black Rain.

  2. In a saucepan, melt butter, stir in flour, cook for 1 min.

  3. Whisk in milk, simmer until thick. Add half the Grater Rain cheese, plus seasoning.

  4. In a baking dish, layer broccoli, pour sauce, top with breadcrumbs and the rest of the cheese.

  5. Bake at 400°F for 10 mins, then broil 1–2 mins to crisp.
