Truffle Parmesan Smashed Potatoes

Like French fries, but extra. These potatoes are crispy, salty, cheesy, and slightly fancy (thanks, truffle oil).
White Rain sharpens the flavor, Black Rain brings edge, and Grater Rain creates that golden, frico-style crust you’ll want to peel off and eat like chips.

Ingredients

1 lb baby potatoes
-
1 tbsp truffle oil (or olive oil)

3/4 cup Grater Rain parmesan
-
White Rain, to taste

Black Rain, to taste
Directions

Boil potatoes until fork-tender.

Arrange on a baking sheet, smash gently with a glass.

Drizzle with oil, season with White Rain and Black Rain.

Top with Grater Rain parmesan.

Roast at 425°F for 20–25 mins until crispy.
